Zuppa Toscana

This soup turned out just like Olive Garden's! My hubby whipped this up for lunch today, I am so fortunate he is such a good cook!
This soup has a rich and creamy broth, with hearty potatoes and sausage.
Ingredients:
1 lb. ground mild italian sausage
1-2 tsp. crushed red pepper flakes
1/2 large onion, diced
1 strip of bacon, chopped
2 garlic cloves
4 cups vegetable stock
1 cup heavy cream
5 large russet potatoes, sliced thin
1/4 of a bunch of kale

Saute Italian sausage and crushed red pepper flakes in a large stock pot. Drain any excess fat, and set aside in a bowl while you prepare the other ingredients.
In the same stock pot, saute bacon, onions and garlic over medium low heat until onions are soft and translucent.
Add vegetable stock to the pot and heat until it starts to boil.
Add the sliced potatoes and cook until soft, approximately 20 minutes.
Add the heavy cream and cook just until heated through.
Stir in the sausage and the kale, and cook until heated thoroughly. Season to taste with salt and pepper, and Serve!

My friend and I made a huge pot of this a few months ago and it turned out amazing! Just like Olive Gardens!!! Now I want to make some!
