Kale and white bean soup, Black Friday





I have been craving soup a lot lately, and have made up a batch every week or so. This one turned out very yummy and hearty.



1 bunch of kale

garlic, I used about 8 cloves, but you could add less, or even use elephant garlic cut into big chunks- it will sort of 'melt' in the soup

4 quarts of vegetable stock,

1/2 an onion, chopped

1 pint cherry tomatoes, cut in half

1 large 28 ounce can white canneli beans(drained slightly)


Saute the chopped onion and garlic in a little olive oil until translucent. Add kale and saute for a minute or so, but not browned. Add stock, tomatoes and beans and simmer on low until kale is completely cooked and wilted. Season with salt and pepper and enjoy with warm, crusty bread. Makes about 4 cups. That simple, but oh so tasty!



Today was Black Friday and Joann's lured my in with some fabulous deals. The store was crazy full, and it took about an hour just to get your fabric cut and check out. And this is all I have to show for it. The right fabrics I am going to use for some first sight baby stuff, maybe blocks or a rattle. The other prints are Alexander Henry, I haven't seen the polks dot one before and don't know what I even plan on doing with it. I had to get some more 'Kleo' and 'apple pear' so I would actually feel as though I had enough to start cutting into it.

This Joann's store sounds wonderful, I keep hearing about it! We have nothing similar here only hideously overpriced fabric stores! Ah well, at least we have eBay! And the soup looks very yummy!

ooh the soup looks delish. i love the sound of the elephant garlic melting! mmmm. you know? i havent had roasted garlic in ages...i think i need to make some....
